Chili Con Carne Recipe - A Simple Old School Chili Con Carne Recipe

Chili Con Carne Recipe - OK, now get together your chili powders both California and New Mexico as well as your chipotle chili powder or canned chipotle’s and your cumin and oregano. Get a small bowl and put all the ingredients in it and mix it together with a little water at a time until you get a light to medium paste texture that you like. This chili con carne recipe is going to rock!

Break out your skillet either cast iron or stainless and heat it up on medium for a second or two and put your bacon in it. Cook your bacon until it is crisp. When it is done put it on a plate with paper towels on it to soak up the excess grease. Take another small bowl and pour out the bacon grease from the skillet, we will be using it down the line. When your bacon is cool enough then chop it up into small pieces as we will be using it down the line as well.

Now go back to your skillet and turn the heat up to medium again and put in 1 tablespoon of the bacon grease back into it. Now, you need to add your cut up/shred up chuck into the skillet a little bit at a time to brown it. So, put a little into the skillet and brown it then take it out and plate it and put some more in the skillet and brown it and then plate it. Do this until all the beef is browned on all sides. Make sure to add just a touch of salt as you work each batch. When all done put the beef aside to use down the line.

OK, Now put another tablespoon of the bacon grease into the skillet and toss in your onions and cook them until they are “sweated” and translucent in color. This means they are soft now. Toss the garlic and jalapeno now and mix it all up until you can smell it. Remember that chili paste that I had you make? Well, now is the time to add that to the mix in the skillet and cook for 3 to 5 on a medium low heat.

Man! I am getting hungry! How about you? Now, get your hands on that cast iron dutch oven. This is the best way to prepare a chili con carne recipe and my fave for any chili recipe at all. Toss in your onions and chili paste with all the meat, bacon and tomatoes. Add some water, the lime juice and sugar. Put the heat on high until the concoction comes to a light boil or simmer. Turn the heat down to low now and cover that cast iron dutch bad boy for about two hours. After the two hours is up take off the cover and maintain the simmer process for another thirty minutes or so.

Ingredients for this chili con carne recipe:

* 1 1/2 Tablespoons California chili powder.
* 1 1/2 Tablespoons of New Mexico Chili powder.2 teaspoons of Chipotle chili powder or 2/3 canned chipotle peppers chopped fine.
* 1 1/2 tablespoons of cumin powder.
* 1 2/2 to 2 1/2 dried oregano or freshly chopped oregano.
* 6 strips of bacon either store bought or custom cut at the butcher.3 lbs of chuck roast. Cut it into chunks of various sizes and shred some to if you * * like.1 teaspoon of salt or season salt or leave salt out for your guests to add themselves.
* 1 large brown or red onion finely chopped.
* 4 garlic bulbs finely chopped or use a garlic press.
* 1 1/2 teaspoons of Worcestshire sauce.1 seeded and finely chopped jalapeno pepper or more to your liking and heat tolerance.
* 1 3oz can of chopped green chilies. Hatch variety preferred.
* 1 can fire roasted tomatoes or 6 tomatoes that you have roasted yourself, chopped fine.
* 3 tablespoons of tomato paste.
* 3 cups of water.
* 2 tablespoons of fresh lime juice.
* 1 1/2 teaspoon of sugar.
* 1 teaspoon of baking cocoa.
* 1 can of either red beans or kidney beans or even pinto beans will do in a pinch. 14-16oz.
* 2 teaspoons of cornstarch diluted into 2 or 3 tablespoons of water.
* 2 bay leaves.

Now it is time to take the cornstarch and water and mix it together with a fork so that you can mash up any lumps that come about. When all the lumps are gone then add the cornstarch mix to the chili. This is your thickener. Take your beans and add it to the chili pot and stir in gently. Put in a touch of salt or add anything else to your chili con carne recipe that you think needs adjusting. If by chance the chili gets thicker than you like, you can slowly pour in a little light or dark beer very slowly to loosen it up a bit and if you dont like beer in your chili con carne recipe then add half a cup of good red wine.
